Getting kids to eat heart-healthy salmon can be challenging, but this Creamy Spinach Dip Salmon recipe can be a game-changer! It combines the kid-friendly appeal of creamy spinach dip with nutritious salmon for a dinner that’s both parent and kid-approved.
When it comes to feeding my family, I’m always looking for that sweet spot between nutritious and something they’ll eat (happily!). This Creamy Spinach Dip Salmon hits all the marks – it’s packed with omega-3s from the salmon, sneaks in some greens with the spinach, and the creamy, cheesy topping makes it irresistible.
The best part? It’s ready in about 30 minutes (it must be noted that my love for Rachael Ray runs deep and her influence is all over my kitchen!), making it perfect for busy weeknights when you still want to put something wholesome on the table.
What You’ll Need
For the salmon and topping:
- 1.5 lbs salmon fillets
- 2 cups fresh spinach, roughly chopped
- 1/2 cup cream cheese (room temperature)
- 1/4 cup sour cream (or plain yogurt)
- 1/2 cup grated Parmesan cheese (divided)
- 2 cloves garlic, roughly chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Lemon wedges for serving
For the roasted vegetables:
- 2 cups broccoli florets
- 1 cup carrots, peeled and chopped
- 1 tablespoon olive oil
- 1/4 cup Parmesan cheese (from the divided amount above)
- Salt and pepper to taste
Step-by-Step Instructions
Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
Prepare your vegetables: Toss the broccoli florets and chopped carrots with olive oil, salt, pepper, and 1/4 cup of the Parmesan cheese. Spread them evenly on the prepared baking sheet.
Start roasting the vegetables: Place the baking sheet in the preheated oven and roast for 13-15 minutes. We’re giving the veggies a head start since they take longer to cook than the salmon.
Make the spinach dip topping: While the vegetables are roasting, add the room-temperature cream cheese, sour cream, remaining 1/4 cup Parmesan cheese, and chopped garlic to a food processor. Mix it up!
Add the spinach: Add the spinach to the cream cheese mixture and pulse until just incorporated. You want some texture from the spinach to remain.
Prepare the salmon: Place the salmon fillets in a baking dish. Drizzle with olive oil and season with salt and pepper.
Add the topping: Spread the spinach dip mixture evenly over the salmon fillets.
Bake everything together: Once the vegetables have had their head start, place the salmon in the oven alongside them. Bake for an additional 12-15 minutes, depending on the thickness of your salmon fillets, and how well-done you like your salmon.
Broil for the finish: Switch your oven to broil on high, broil for 3-5 minutes to get that beautiful golden brown color on top of the spinach dip mixture. (Veggies can stay in the oven too.) Watch carefully to prevent burning!
Serve: Plate the salmon alongside the roasted vegetables and serve with lemon wedges for squeezing over the top.
